Easy peasy Chocolate Cake | International Hotel School

When it comes to any food recipe for a student, chocolate cake is right up there with beans on toast, Spaghetti Bolognese and pizza. Cake has so many benefits too – it’s healthier than sweets and chocolates, it can be disguised as a breakfast option (it does have eggs in it after all), it can brighten up any lunchbox (chocolate is like a giant hug really), and it’s the perfect pudding after dinner. Here’s our take on a super easy chocolate cake that will stay fresh for a couple of days.

INGREDIENTS

  • 2 ½  cup (625mls) Cake Flour
  • 2 cup (500mls) brown sugar
  • 10mls Bicarb
  • 5mls baking powder
  • 125ml Cocoa
  • 1 cup (250mls) Oil, sunflower
  • ½ cup (125mls) Water
  • ½ (125mls) Plain yoghurt
  • 2 eggs
  • 15mls Vanilla essence
 

METHOD:

  1. Preheat your oven to 180 degrees
  2. Grease two 23 cm round tins or alternatively, a 30 x 20cm rectangular cake tin
  3. In a small pot bring to the boil the cocoa, oil and water. Put to one side and allow to cool
  4. In a jug or small mixing bowl whisk together the yoghurt, eggs and vanilla essence
  5. In a large mixing bowl sift the flour, bicarb, baking powder and sugar. Add the cocoa mixture and yogurt mixture alternatively. Beat until combine
  6. Pour your cake batter into your greased baking tins and place on the middle of the oven to bake
  7. Bake for 40 to 50 minutes. Remove from oven and leave to cool in the pan for 10mintes
  8. After 10minute remove the cake from the pan and place on the cake rack

Best served with whipped chocolate ganache or your favourite icing

Now, from here, you can easily go a number of ways with this delicious chocolate sponge cake. Either slice up sections and serve warm with custard as a pudding or add some of your favourite icing and serve with coffee.

For a simple buttercream icing, blend 1 heaped teaspoon of cocoa powder with a little boiling water until it becomes a paste. Leave to cool in the fridge.  Add 85 grams of butter or baking margarine, mix well (with a beater, it’s much easier) and add two cups of sieved icing sugar. Mix well and add a tablespoon of milk if required until you get the consistency of icing you’re looking for. Baking recipes needn’t be complicated or expensive. This cake is a substantial size and it embraces a very simple ‘all-in-one’ method (favoured by some baking legends like Mary Berry for example) – so use fresh ingredients, the correct size baking tins and a good working oven to create a chocolate cake to die for.
