Student recipe series : Breads that aren’t really breads at all…

Bread is a staple for any student. Making bread is fashionable again, but busy students don’t always have the time. Artisan bread is no longer reserved for fancy deli-type shops and can be bought in your local supermarket these days, like Spar. So instead of doing a regular bread recipe, we’ve decided to do 2 bread recipes this week (one savoury and one sweet) that are not really breads at all, but fun, delicious and easy to make bread staples that everyone will enjoy (and did we mention they are easy on the pocket?).

 

Banana Bread

With only a few basic ingredients and at just 45 minutes to bake, Banana Bread is perfect for a lunchbox treat or midnight nibble. And because it contains a healthy fruit ingredient, we’re labelling this bread as healthy (okay, we admit, it has got a cup of sugar, but you can always replace the sugar with a suitable substitute).

Makes: 1 loaf prep time: 10 minutes cooking time: 45 to 50 mins

Ingredients:

125 grams butter
1 cup sugar
2 large eggs 3 mashed, ripe bananas
1tsp. vanilla essence 2 cups of flour
1 tsp. baking powder 1tsp. baking soda (bicarb of soda)

Method:

Preheat your oven to 180 degrees and grease your loaf tin. In a bowl, cream together your butter and sugar. Add the eggs, banana, and vanilla essence and beat well. Fold in the flour (sifted) and baking powder, and then finally add in your baking soda / bicarb. Mix well and pour the batter into a greased loaf tin. Bake in the oven for 45 minutes. Cool, slice and serve with lashings of butter.

Cloud Bread

Wondering what this new bread trend is? Well, it’s certainly becoming very popular in Banting circles because Cloud Bread contains no carbs, is packed with protein and is completely gluten-free. The great news is that it doesn’t taste like cardboard – it’s flavourful and melts in your mouth. Then there’s the added benefit of knowing it only has 3 ingredients and takes under 20 minutes to bake.

Makes: 10 to 12 rounds Prep time: 10 to 15 minutes Bake time: 17 to 20 minutes

Ingredients:

3 eggs, separated (you will use all of the egg)
3 Tablespoons for cream cheese
¼ tsp. of baking powder (Garlic salt, salt or dried herbs to taste)

Method:

Preheat your oven to 150 degrees Celsius and prepare a baking sheet. In a bowl, mix your egg yolks and cream cheese until smooth. In a separate bowl, add your baking powder to your egg whites and beat with an electric beater until stiff peaks form. Fold the egg yolk mixture into the egg white mixture and retain as much air in the mixture as you can, whilst ensuring that the two mixtures combine properly. Spoon the mixture into 10-12 even rounds on a baking sheet and sprinkle with garlic salt, salt or herbs if you like. Place in the oven and bake for 17 to 20 minutes or until cooked through and golden brown. Serve hot.
