The international Hotel School offers an exciting programme that will provide the knowledge and experience to move effortlessly between the most basic puff pastry to complex plated desserts.

Clear lemon gel
Ingredients:
200ml water
2 tbsp sugar
1 lemon’s juice and zest
1 lime
Green gel food colour
4g agar agar/ gelatine
Method:
1. Bring the water, sugar, lemon juice and zest to the boil
2. Add the agar agar
3. Simmer for 2-3 minutes and skim off any foam that rises.
4. Once ready pass through a chinois
5. Pour into a plastic container and leave to set.
Candied orange skin/peal
1 medium size orange
Start by cutting off the top and tail of the orange, turn orange onto the flat side.
Slowly start to peal the orange, very thinly leaving the white skin behind.
Take the orange skin (ensure there is no white flesh attach) and lay it skin down on a cutting board
Take a chef knife and slowly cut even length strips 1mm in thickness with all the orange skin
Put all the thin strips in a pot of water and cook until its soft to the touch,
Add half the amount of sugar to water in the pot and bring to boil again. Boil until it has a clear shiny consistency
Strain the liquid leaving the peal behind.
Spread the peel out on a baking tray and cover with caster sugar
Leave to dry, before use.
